Homemade Honey Marshmallows

You'll Need:

  • Coconut oil or parchment paper

  • Glass baking dish (9x9 or whatever you have!)

  • Standing mixer with whisk attachment

  • Sauce pan and whisk

  • Measuring cups and spoons

Ingredients:

  • 1/4 cup gelatin

  • 1 cup of filtered water (you will be dividing this into two half cups)

  • 1 cup of honey

  • 1 tsp of vanilla extract

Directions:

  • Grease glass pan with coconut oil or place parchment paper inside.

  • Place gelatin and 1/2 cup of water in mixer, mix for a few seconds on low to combine. Let sit for a few minutes to thicken.

  • While the gelatin thickens, place sauce pan on stovetop, mix the honey and 1/2 cup water together and bring to a boil.

  • Whisk and stir for about 8-10 minutes or until starts to thicken a little.

  • Place honey syrup into standing mixer and combine with gelatin. Whisk on high speed for about 12 minutes. Mixture should turn white and start to thicken and form a cream like consistency and soft peaks.

  • Add 1 tsp of vanilla extract for flavoring as the last step.

  • Place marshmallow cream into greased glass pan or baking dish and let it set (about 4-6 hours minimum). Do not refrigerate.

  • Once the marshmallows are set, feel free to cut into squares or any shape you desire! If you have nice cookie cutters this is a nice time to involve the kids to create fun marshmallow shapes!

  • Store in a dry, cool area of the home. You may also freeze them for longer storage - they freeze nicely!

*Please use organic and natural ingredients whenever possible.
