Soaked Rice
Ingredients:
2 cups of organic rice (white, brown, wild)
4 cups of filtered water
1/4 tsp of sea salt
1 teaspoon of lemon juice or apple cider vinegar
Directions:
Combine all ingredients into a glass bowl and leave out on counter for 12-24 hours (minimum 4 hours) prior to cooking.
Rinse rice in a strainer, removing the water you soaked it in previously.
When ready to cook bring fresh, filtered water to a boil and then add the newly soaked rice. Cover pot and turn off stove and let rice cook/steam until fluffy and all liquid has evaporated.
Serve immediately.
Notes/Variations:
When cooking, be sure to use less water than the package directions as the rice has now retained water. Your rice will now also cook much faster.
Instead of cooking with fresh, filtered water you can try cooking rice with an organic meat stock or broth (after soaking of course).
Add to soups, stews or add pastured butter, herbs and raw cheese for a side dish.
*Always use organic, local and natural ingredients whenever possible.
